Ashridge Creme Brulee - Eve's Commonplace

Ashridge Creme Brulee

Ingredients:
1pt whipping cream
4 egg yolks
50g sugar
Vanilla pod

Method:
Heat the cream with the vanilla pod in a bain-marie (double boiler) until hot but not boiling. 
Whisk together the yolks and sugar. 
Pour the hot cream onto the egg mixture and whisk.
Strain through a fine sieve.
Pour into ramekins (approx 6-8) and cook in a bain-marie for 35-40 minutes at 180C (350F) or until set.
Cool.
Sprinkle demerara sugar over the top and caramelise under a low grill.
